Introduction
In order to comply with Global Food Safety Initiative or GFSI Benchmarking requirement document version 7.1, the GFSI recognized and approved scheme – FSSC 22000 has revised its standard requirements to version 4.1 in July 2017 with additional requirements of food defense threat and food fraud vulnerability assessments and control measures.
Any organizations within the food chain certified to GFSI recognized and approved schemes like FSSC 22000 shall establish and implement food defense plan with the inclusion of threat and food fraud assessment, prevention and mitigation control measures.
It is essential to ensure an effective food defense plan implementation by conducting hands-on and on-site coaching of the plan, in particular the monitoring of threat assessment critical control plan (TACCP) and food fraud vulnerability assessment critical control plan (VACCP) as well as review of monitoring outcomes.
Learning Objective
By the end of the training, participants would be able to:
- Implement, monitor and review the food defense plan in particular threat assessment critical control plan (TACCP) and food fraud vulnerability assessment critical control plan (VACCP).
Duration
2 days (9.00am to 5.00pm) or duration proposed at quotation.
Methodology
Training session includes classroom lecture, exercises, group work and discussion.
Target Participants
Top management, Managers, Executives, Engineers, Supervisors, food handlers, those who involved in food quality and safety during the preparation process. Understanding of current FSMS and FSSC requirement is beneficial.
